Involved in its development, as well Cartif, 6 companies in the region (Emilio Esteban, Prosol, Hispanagar, Dibaq, Abrobiotec and Matarromera), 3 universities (USL, ULE and UBU) and Palencia CETECE.
The project aims at obtaining natural antioxidant from grapes, cereals (oats and sorghum), coffee and algae. The second phase will be the design of ingredients from-wine polyphenols, ferulic acid and antioxidants in coffee cereal and algae. Subsequently, the research will advance the implementation of the new formulations in various matrices and sensory evaluation of the contribution. Finally, we will study the effect of antioxidants on food matrices, meat, dairy, animal feed, pasta, coffee, flour and beverages.
The objective is to evaluate the preservative effect that prevents oxidation and 'staleness' by physico-chemical properties, improved microbiological stability, sensory properties and nutritional-functional effect and what happens to provide human or animal body through the bloodstream.
